Stuffed Dried Eggplant Recipe
Materials
- 15 dried eggplants
- 1.5 cups of rice
- 1 tablespoon of chili paste
- 1 tablespoon of tomato paste
- 1 onion
- 1 green pepper
- 2-3 cloves of garlic
- 4-5 sprigs of parsley
- 2 sprigs of mint or 1 teaspoon of dried mint
- Half a teaspoon of dried basil
- 1 teaspoon cumin
- 1 teaspoon of black pepper
- 2-3 tablespoons of pomegranate syrup
- Quarter cup of olive oil
- 2 tablespoons of olive oil (on top)
- 3-3.5 glasses of water
How to make Stuffed Dried Eggplant?
Dried aubergines are washed to be boiled and put in the pot with some water. Boiled eggplants are removed from the pot and drained. For the stuffing, rice, tomato paste, oil, onion, garlic, pepper, parsley, pomegranate syrup, salt and spices are mixed. The materials to be chopped should be finely cut. The prepared stuffing is filled into the eggplants. Cut the tomatoes in half and cover the eggplants. Water and 2 tablespoons of olive oil are poured over the eggplants we placed in the pot. Close the lid of the pot, bring it to a boil in medium heat, and then cook it on low heat. Bon Appetit.
