Traditional roasted chickpeas have been produced in Serinhisar District since the 1980s. Serinhisar District has started to produce roasted chickpeas in factories with modern machines and has become Turkey's most important roasted chickpea production center, branded and started exporting. In Serinhisar, besides the traditional yellow and white chickpeas, different production methods such as spicy, sugary, etc. were tried and approximately 30 different types of roasted chickpeas were produced and product diversification was pursued.

Production stages of chickpeas

It is obtained by seasoning the chickpeas after days of work and roasting them in special ovens. This process goes through the following stages: Chickpea is subjected to the annealing process, that is, the heating process, 3 times in 3 separate days. After the third annealing, it is laid out on an area and left to rest. This covers a period of approximately 15 days. The chickpea is soaked in the evening of the day it will be made, so that it swells. The next day, the roasted chickpeas are first heated in the pan, and then the shells are removed by gently pressing with a tool called "mafrak". During this process, some of the chickpeas are divided into two. These two parts are separated from the whole by a sieve. Splits are also called "broken chickpeas". These are mostly used to make chickpea flour.
